WHAT COURSE DO I FOLLOW? WJEC Catering
WHAT WILL I STUDY?

CheckersThis course is based on the catering industry (restaurants and cafes) and includes four areas of work.

The catering industry – to include catering outlets, structure of the industry, safety at work, health and hygiene, food poisoning and safe working practices.

Nutrition and menu planning – includes nutrition, menu planning, commodities and costing.

Food Production – includes catering terms, food preparation, presentation of food, food and beverage service.

Technological developments – includes kitchen design, equipment, food processes, packaging, labelling and the use of ICT.

DETAILS OF FORMAL EXAMINATION

There is one two hour exam paper at the end of the course which carries 40% of the final mark.

Students will be entered for the foundation or higher tier of the examination.

COURSEWORK DETAILS Coursework is worth 60% of the final mark and consists of two practical exams (year 10 and year ll) and a written coursework project not exceeding 3000 words. (8 sides)
ADDITIONAL INFORMATION Practical skills are a very important part of the course and students will be expected to provide ingredients each week in both Year 10 and Year 11. Work experience in the catering industry would also be very beneficial.
